I too have a Insta Mic6 plate and PEI, and only print with PETG. If that first layer is compressed to much to the build plate, you will never get it off the PEI. Your gap maybe a tad too large and that's why the PET is not laminating together. I am doing an Esun PET print right now and I'm getting good results an extruder temp of 247° and bed temp of 80°, I believe most of the other settings are the same as this guide. Its not likely that he is running a thermocouple to sense his temp. Its more likely to be a thermistor. Thermistors read low when there is a disconnection, so if I had to guess I would say that your maxtemp setting in your firmware is 250 or 255C and you had a bit of an overshoot with your temp and...

I would check your thermocouple to see if it has any issue(wires) or connection. Usually when a thermocouple goes bad it reads low.
