I put a black line with a marker on the back end of my extruder shaft so it's easier to see if it is spinning. This is mostly for when I'm changing filament and I want to make sure it's done retracting or extruding before I move on to the next step. It's also very handy for debugging stuff like this...

There are two facets to the thermistor connections: electrical & thermal. Even if the wiring is good, the thermistor may have come loose in the hot end. If I remember correctly, the steps per mm settings (gcode M92) in the two machines were different. I think one was set to 80, and one was set to 88 (10% difference). That says when the printers were built, they adjusted that firmware parameter to match the motors they were using.

I wonder if they got a batch of different motors during their supply chain problems, and adjusted the steps per mm to compensate in the firmware. Ordinarily, it wouldn't hurt anything unless you change or swap the motors around....

It's possible the motors have different step sizes, and you got one that is mis-marked. If it's was working before & the motor hasn't changed, then it sounds like the drive current from the electronics may be too low. The low-voltage warning on the Raspberry Pi might be important.
