You need more tension. Tighten the screw and post another video. I am also going to guess you have a minor clog. There could also be something in the filament drive as well causing the filament to drag.

In all honesty its just a fan setup. If you look on Thingiverse and this forum you will see a variety of fan setups.
I can't think of the user here who has an incredibly robust fan setup. I wouldn't let that be the deciding factor.

I would like to hear more about the offsets. I have a few different print surfaces/beds, and this would be awesome to have so I can set it easily upon swapping beds.

Two things come to mind.
1) Extrusion Multipler - If you are not laying down as much plastic as intended, the wall will be weak.
2) Heat - If heat is not enough, the plastic will not full bond to the previous layer.

For what its worth, I recently purchased .35 stainless nozzles, and I have been printing non-stop with them, without issue.
