Accelerations would be on the high side, probably, but there isn't a "best" with these settings. It's finding the compromise that works best for the parts and your personal priorities - speed/acceleration/jerk all work together to impact print quality.

Heat transfer in stainless steel sucks compared to brass. If trying to print fast, I could imagine a situation where the tip of the nozzle cannot maintain temperature as the plastic passing through it draws out the heat - and transfer through the material can't keep up with the demand. I print on PEI at 110C. Haven't messed with hair spray or glue with ePC, and I know Kapton didn't work for me. I don't recall what else I tested before getting good parts.
