Your gap maybe a tad too large and that's why the PET is not laminating together. I am doing an Esun PET print right now and I'm getting good results an extruder temp of 247° and bed temp of 80°, I believe most of the other settings are the same as this guide. Its not likely that he is running a thermocouple to sense his temp. Its more likely to be a thermistor. Thermistors read low when there is a disconnection, so if I had to guess I would say that your maxtemp setting in your firmware is 250 or 255C and you had a bit of an overshoot with your temp and...

I would check your thermocouple to see if it has any issue(wires) or connection. Usually when a thermocouple goes bad it reads low.

Your best bet is to use a pei bed. Can you maybe make the print in sections. That would help a lot. It would also save you some material. That's a lot of support material you are wasting printing it in one peice.
