Different Size Nozzles

I am ordering some spare parts. Managed to kill a fan when a retracted filament came out of my hand and hit a 50mm fan blade, so I am down to my last backup

I noticed there is a four pack of brass nozzles with various diameters for sale. I also noticed some stainless steel nozzles. I am wondering about the use cases for these different sizes and the stainless. I am still beginning with my 0.35 mm brass nozzle and PLA.

The different sizes of nozzles will let you:

Smaller sized nozzles - print finer surface details with a much smaller nozzle tip. (Downside is it is much slower to print.)
Larger sized nozzles - print in about a quarter of the time - you are shooting out plastic in a flat hurry. (Downside is less resolution - it's good for parts where appearance doesn't matter, but are needed quickly.)

The stainless steel nozzle is harder than the brass and is used for metal filaments, which can erode a nozzle over time.
