So with that said, I can expect my z height to be correct based on a dial levelling and a calibration print?

i do the same as ed and make my first layer exactly the same as all the others. my first layer height is at 100% in s3d and i never change that. if that height is correct then the width will be correct and the same as all the other layers above. i personally used to use feeler gauges to set the gap and i supposed i would still if i was to build a new machine just so i could get it close. now i just set it by how it prints. i can tell right away as soon as i see 2 extrusions printed next to each other what has to happen with the gap. i am never too far off and since your printing with ok results i would say your very close as well. it doesnt take much to make a big difference. adjust 1/2 a flat on the head of the adjustment bolt at a time. one or two quick prints and adjustments should probably get you where you need to be. have you printed my bed gap calibration model? this will tell you what you need to know.

After an iteration or two, things should converge. I put five hollow squares at the platform center + corners to verify the Z offset and platform level: the middle one gives you the offset and, if they're all equal heights, then the platform is level.

Rather than making a mechanical adjustment, change the initial Z offset value in the slicer by the difference between the actual and nominal heights. You'll get the sign wrong the first time, but the next set of squares will show the problem and you'll never make that mistake again... until the next time, of course. [sigh]

And, as jimc says, after you see what a correct first layer looks like, you can immediately tell when it's not right. I still run a set of squares to verify the adjustment, though, because it's quick & easy.
