Is it possible it's the bed thermistor?
The video seemed to show 26 °C for Extruder 0, which would definitely be a problem.

The other two temperatures looked fine.
would it be possible for extruder 0(while not being used in this print) to cause the mintemp?
The firmware doesn't know your intentions, so it will report any errors it encounters.

With those new thermistors, it's time to examine the cables & connectors. A wiggly-jiggly test may reveal something, but it'd be more convincing to dismantle the entire loom and see what's going on inside.

It was indeed an intermittent break in one of the thermistor wires of extruder 0 about a third of the way down the wiring harness! There were no physical signs of a break, and took an immense amount of force to finally get it to break at the damaged area.

The thermistors don't draw any current worth mentioning, so as long as there's a single non-quite-broken strand of wire making the faintest contact, it'll (seem to) work (intermittently) just fine. Pulling on the wire might make the failure more obvious, but ya never can tell with failures.

For example:

Lay in a stock of the wires & connectors you'll need to replace everything, then rewire when you have some downtime: one wire fatiguing to the point of failure means the rest are likely in the same condition.
